Oolong tea, known as wu long cha in Chinese, is a semi-fermented tea. The making process of oolong tea is mainly picking, withering, kneading, fermenting, and baking, which absorbs the making methods of green tea and red tea, hence giving this kind of tea the fresh and flower fragrance of green tea and mellow taste of black tea.
Tie Guan Yin (Iron Goddess of Mercy) is a popular Chinese oolong tea. It is also sometimes written as Ti Kuan or Ti Kwan.
Brewing Instructions :
1. Water temperature : 90-95ºC (194-205ºF)
2. Ratio of tea to water : 1:20, 5grams tea with 100ml water
3. Time : steep for 2 minutes.
You can get 3-6 infusions infusions. Increase the steeping time 30 seconds or so for each infusion. How many infusions you do depends entirely on your taste Experiment.
Oolong Tea Caffeine Content :
Oolong tea contains middle caffeine level. According to the USDA, a cup of jasmine tea (8 ounces) made from green tea leaves contains approximately 40 milligrams of caffeine.
