Maoxie Oolong tea, also called hairy crab tea,the fresh leaves of hairy crab tea have large heads and pointed tails, many white hairs, small round leaves, deep, dense, sharp serrations, and downward hooks. There are small hairs under the surface leaves, and their appearance is like the hairy crabs in creek.

Tie Guan Yin (Iron Goddess of Mercy) is a popular Chinese oolong tea. It is also sometimes written as Ti Kuan or Ti Kwan, known as wu long cha in Chinese, is a semi-fermented tea. The making process of oolong tea is mainly picking, withering, kneading, fermenting, and baking, which absorbs the making methods of green tea and red tea, hence giving this kind of tea the fresh and flower fragrance of green tea and mellow taste of black tea.

Brewing Instructions
1. Water temperature : 90-95ºC (194-205ºF)
2. Ratio of tea to water : 1:20, 5grams tea with 100ml water
3. Time : steep for 2 minutes.
You can get 3-6 infusions infusions. Increase the steeping time 30 seconds or so for each infusion. How many infusions you do depends entirely on your taste Experiment.
Oolong can be served hot or serves well as an iced or chilled beverage.

Oolong Tea Caffeine Content:
Oolong tea contains middle caffeine level. Oolong tea and green tea contain similar amounts of caffeine, approximately 10 to 60 milligrams (mg) per 8-ounce cup. Unsweetened brewed tea is considered a zero-calorie beverage.
